Spiced Fall Treat - Pumpkin Spice Cookies

White Chocolate Pumpkin Spice Cookies

Servings: 12 bakery sized cookies

Ingredients:

2.5 cups all purpose flour

1 cup salted butter, room temp.

1.5 cups brown sugar

2 eggs

1 tbsp vanilla extract

1 tbsp baking powder

1 tsp baking soda

2 tsps pumpkin spice

1 cup white chocolate chips

Directions:

Cream together butter, sugar, pumpkin spice and vanilla. Beat in eggs to incorporate. In a seperate bowl, combine flour, baking powder and baking soda. With your mixer on low, slowly add your dry ingredients until a soft dough has formed. Fold in your white chocolate chips and set aside. Pre heat your oven to 350 degrees fahrenheit. Line a baking sheet with parchment paper and scoop 2 inch ice cream sized scoops of dough onto baking sheet approximately 3-4 inches apart. Bake for 12-14 minutes, rotating your baking sheet half way. Move to cooling rack and let sit for 20 minutes. 

For and added fall touch, drizzle with cream cheese icing and spinkle with cinnamon or course sugar.
